Eggplant Stackers

M threw this together on the fly, and boy was it delicious.  She basically made stacks of thinly sliced eggplant (lightly cooked in olive oil first), topped it with capers, canned tuna, tomatoes, peppers, mozzarella, red onion, olives, and scallions, and then baked it in a casserole dish for 20 minutes at 350 degrees.

The tuna was a really nice touch along with the salty capers and olives.  Big plate not necessary.
